Potato & Pumpkin
Bake
- 1/4 small Pumpkin
- 1 Sweet (orange skin) Potato
- 6 - 8 Med Potatoes (red skinned for a great
flavour)
- 1 veggie chicken/beef flavour style stock cube
- 1-2 shallots
- 1-2 cups Coconut Milk
- Vegan Cheese
- Vegan Meat
- Water
Preparation:
- Preheat the oven to approx 120
- Slice pumpkin and potatoes, then steam for 5-6 minutes
on medium heat.
- Remove from the steamer and drain.
- Next layer the pumpkin and potatoes in a small oven
dish.
- Mix the milk and stock cube together in a blender or
mini processor for about 1-2 minutes
- Cut the vegan meat into small cubes, and slice the
shallots.
- Next pour the milk mixture over the potatoes &
pumpkin.
- Blend the vegan cheese and 1/2 cup of water together in
processor until combined well (if you like a thicker or
thinner consistency add as much water as
desired)
- Pour the cheese mixture over the potatoes and place the
shallots & meat on top.
