Caramelized Potatoes
675g new potatoes, washed & scrubbed
4 Tbspn dark brown sugar
60g vegan margarine
1 Tbspn orange juice
1 Tbspn chopped fresh Parsley
Preparation:

Cook potatoes in a saucepan of boiling water for 10 mins, or until almost tender. Drain thoroughly.

Melt the sugar in a large, heavy based frying pan over low heat, stirring constantly.

Add the margarine and orange juice to the pan, stirring the mixture constantly as the margarine melts.

Add the potatoes to the orange and marg mix and continue to cook, turning the potatoes frequently until they are completely coated in the caramel.

Sprinkle the chopped parsley over the potato mix and season according to taste with salt & pepper.

Transfer the caramelized potatoes to a serving dish and serve immediately.
